My Notes

Nose:
Present at first, then pulls back slightly. The sherry is clearly dominant — but more elegant than most. Less fruity. Less sweet. You can't pin it down to single notes. It's sherry as a whole, not in bites.

Palate
Warm, woody, dry. But — and that's the trick — the whisky itself speaks first. Classic barley. A small alcohol kick. Slightly oily. Only then does the sherry come in. With dry sweetness. Raisins, plum. Deep, dark, violet blue. Like a second act.

Finish
Now the sherry takes over completely. The dryness stays on the tongue and begs for the next sip. Flavor-wise, red fruits and a sticky sweetness linger. For a moment you ask yourself: did I just have whisky or sherry?

The Aura

Why these colors? Cool Indigo is the elegant, cool depth of this whisky — not a warm sherry, but a dark, quiet one. Soft Plum stands for the heart: the plum, the raisins, the dark fruit that rises in the second act. And Crisp White? That's the dryness. The clarity. The moment of elegance that holds the whole thing together.

My verdict on the Laizhou Fino Sherry Cask:

Very cask-driven, but never over the top. The cask has manners. It doesn't push. It lets the whisky speak first, then takes over. A perfect match for the elegance Fino brings anyway. For everyone who loves sherry casks but finds the heavy PX or Oloroso bombs too sweet.

Nose: 
Bright and refined, with notes of green apple, toasted almond, vanilla, and subtle sherry nuttiness. Plus cinnamon, cedar wood, sultanas, salted plums, Chinese dates (jujube), brown sugar, and toasted nuts.

Palate
Smooth and layered. Honeyed malt, dried fruit, almond pastry, and gentle spice. Caramel and licorice as an oily-sweet prelude that merges into sherry spice and oak aromas. An earthy sweetness with caramelized brown sugar and a more raisin-like plumminess. 

Finish 
Clean and lingering. Toasted nuts, light oak, and a delicate dry sherry character. Licorice and multi-layered sherry cask notes persist for a medium length, ending with sweet facets.

The Reality Check

Laizhou describes every nuance precisely: apple, almond, cinnamon, dates, jujube. That's the analytical view — lab. My experience is different: I don't find the complexity in single aromas, but in the structure. Where they see „layers", I see „acts". First whisky, then sherry. Both are true. The distillery dissects, I experience. That's not less, that's different.

And that's what makes this Fino so special. He's not loud, he's not sweet, he's not easy. He's elegant — and he tells a story in two acts.
